12 ounces Olive and Sinclair (67%) Chocolate chopped into preferred size chunks
For Candied Bacon: Preheat oven to 350. Lay strips of bacon out onto baking sheet on Bakers rack. Sprinkle with brown sugar evenly. Season with salt and pepper. Bake for 11 to 12 minutes. Then remove from oven and flip. Re-season with brown sugar if necessary. Bake for additional 8 to 10 minutes or until crispy and deep brown in color. You can break up into pieces however you like…….robo-coupe, mallet, hammer etc. There is enough for snacking cause Benton's is great stuff on its own.
To make cookies: combine flour, baking soda and salt in a small bowl. In mixer with Paddle attachment, cream together butter, sugars and vanilla. When it is light and fluffy, add eggs one at a time. Then slowly add in four mixture 1/3 at a time. Add Bacon and Olive and Sinclair chocolate.
Spoon dough (about a tablespoon per cookie) onto an ungreased baking sheet and bake at 375 for about 9 – a little longer if you like your cookies crispy.
